Bonjour! Looking for a hotel with a view of the Eiffel Tower, and in a nice area for walking. I like the Latin Quarter and St. Germain areas, to give you an idea of my tastes. Would like to stay under 300 euros per night.

I've stayed in 3 hotels that have had limited Eiffel Tower views.
Hotel Relais Bosquet
Hotel Beaugency (although the last time the ET view was from the bathroom window so I had to stand in the tub to see it, hahahaha!!)
Hotel Muguet
The tower views will all be from rooms on the upper floors and there are only a few for each hotel. All are in the 7th near the Rue Cler area.
I always feel like I need to ask how much time you plan on spending in your hotel room if the view out of the window is that important?
Plus, staying in the areas you mention means that any room that has a view of the Eiffel tower will be at the top of the building . Usually these are the smallest rooms, and less likely to be served by elevators
In 2015 we stayed at Hôtel Duquesne Eiffel. Some upper rooms have a view of the tower. Ours didn’t, but we were able to stand in front of the hotel and see it. Our room was small.

All 3 of the hotel rooms in the hotels I mentioned are accessed by the elevator. They were the same size as other rooms I've stayed in in those hotels. The smallest was probably the "stand in the tub" view at the Hotel Beaugency BUT I've also stayed in the room across the hall several times which has a view from the window and that room is "normal" compared to the other rooms at the Beaugency. Also that was a small single vs a double.
Last spring I wound up with an ET view at Relais Bosquet. In that room I could actually see the ET while I was lying in bed which was quite nice because I liked watching the twinkle at the top of the hour from the comfort of my room, lol.

Me, too! I paid extra at Relais Bosquet for our ET view, and we couldn't see it twinkle from the bed, but I still thought it was magical to watch every night. The room wasn't small.
The night we visited the ET, we went down to the bar on the 2nd floor and watched it twinkle from inside. I recommend that experience, also.
Pam. Are any of those in the 6th?
Agree with Pam! We tend to stay in the same hotels and have done those same ones, with the best view from the Relais Bosquet which we love. You have to ask for an Eiffel Tower view room. There was one on the 6th floor that had an most excellent view. Believe it was room 64 which you can see the tower from the bed and the window!
