My friend and I are leaving on our first trip to Europe this summer 2016. We have a long list of places we would like to see. Right now we are trying to decide between Greece and Spain. Suggestions/thoughts?

Kayla, when I was 23 my friend and I did 3 months in europe ( august to October, ) saw many amazing places, we loved most of them, but for us a highlight was two weeks on the Greek islands, had best time ever!
This spring summer my 19 daughter and her two friends are going for 8 weeks, they are lucky because they will be able to do both Spain, and greece ( since they have enough time) but if they had to do one they too were going to pick greece just based on reports they got from their friends who have already done their europe backtracking trips... ( because obviously being the mom my opinion isn't that important to them lol)
Now, keep this in mind , our two weeks in Greece was a nice beach break from all the museums and cathedrals we had already seen, and my daughter also has a city heavy itinerary for her trip, so greece is just a fun break , if you really aren't into beautiful beaches and cool bars etc,,, the islands may not be to your personal choice, and there are very nice beaches in Spain, and it's likely easier to get to Barcelona from more places then then the Greek islands...
Gosh it's it's a tough one Kayla, , like my daughter you are going to have to figure this out based on your personal interests. ..good luck. Both are wonderful.
It depends on what you are covering for the rest of your trip, but I would say Spain. Easier to get to from most of Europe, better food and better accommodation on the whole.

If you're keeping the other parts of the itinerary and given these two choices, I would say drop Greece. This is based on logistical considerations.
I also backpacked Europe for 2 months when I was 21 and had to make the same choice. I opted for Greece and was glad I did. After whirling through the major cities and attractions of Western Europe, it was such a nice change to go the Greece. Not much in the way of attractions, museums or churches. Other than the Parthenon, the other historical sites have been worn down to a nub by the passage of time. If you want to see Greek artifacts, you are probably better off going to the British Museum. And Athens is an ugly city.
But the beaches on the Greek islands are so nice and the waters are the bluest in the world. I went to an out of the way island called Skyros on the suggestion of a backpacker. Nothing but goat herders (and an air force base on the otherside). I was one of as far as I could see 3 tourists on the whole island. No clubs or parties. Miles of beach just to myself. I ended up staying there one week. With my Eurail youth pass, I usually only stayed 1-2 nights and then I would move on. It was the most relaxing part of my trip. I enjoyed the break from the modern world. On my way back to Italy, i also visited Corfu which is much more active. If you want more bars and clubs, there are the well known Mykonos and Santorini.
I think it depends on what you're hoping to see and do. How would you ideally spend your time?
