Rather than rent a car we are interested in hiring a driver to go from Portugal to Spain and then from Spain to South of France. Does anyone have some thoughts, ideas regarding options for this?

Several people here have reported good experiences with the Mydaytrip platform. For connections between Portugal and Spain, it is a good option when you are pressed for time.
Between Spain and southern France, it depends where you are going. If you are starting from Catalunya (Barcelona, Girona, etc) then the high speed train might be a better option.
But if you are trying to go from say, La Rioja to Bayonne (just an example), then it makes sense to hire a driver if you can afford it.
Thank You for the info. We are going to be traveling for 2 months and will have most likely a bit more luggage than most ( as well as a guitar ) so finding a driver between destinations is going to make sense, even though it seems expensive. In the end renting a car, gas and paying parking at the hotels winds up being a major $$$ as well.
We thought the drive we had with mydaytrip was much better than flying! We did upgrade the car and went from Seville to Spain
