Tourist sites / businesses on General Election day

The UK PM has just called a general election to take place during a planned trip to Wales. Do tourist sites / museums / businesses generally keep normal hours on a UK general election day?

Yes it is very much a normal working day. Polling Stations are usually found in church halls, community centres, possibly kleisure centres, but this won't affect you.
