You don't say where you are in the market? High end? Budjet? Mid?
I have not stayed in this place but it is generally regarded as probably the best Hotel on Gower. http://fairyhill.net
It is in an isolated position down a backroad at towards the western end of the Gower peninsula - so, a car would be essential.
