If you go to ViaMichelin.com and zoom way, way in on the three route options it provides, you'll find any especially scenic segments outlined in green. It's a bit confusing on this particular map, because some of the roads start out begin marked entirely in green. You're just looking for a more subtle green line. It appears to me that the westernmost route (through Wales) is probably the most scenic.
Three pretty towns/cities along the way if you choose the middle route are Shrewsbury, Ludlow and Chester. Ludlow is quite small but has become a foodie destination. Lodging will be more expensive there than one would otherwise expect in a place that size. Chester is a very picturesque town and--under normal conditions--quite touristy; it's very close to Conwy and not a good half-way stop if that's what you're looking for. I haven't been to Shrewsbury, but it's about the same size as Chester and has a picturesque historic center.
If you happen to be a book person, you might like to stop in Hay-on-Wye, a town full of bookshops. It's not on one of the direct routes but wouldn't require a long detour.
Thanks for ViaMichelin.com link. I like Google Map, too. Your recommendations are what I would advise also. I enjoyed Chester and have stayed there a couple of times. It is a great place to start a UK trip to Wales if you Land at Manchester. Another place to stop on the way from Bath is Stoke on Trent...this is the Potteries District. We enjoyed visiting the Wedgwood Factory and Museum. The other famous English Potteries have factory outlet stores there, too.
We enjoyed the towns acraven mentioned. We didn’t spend the night in either Chester or Shrewsbury, but did spend a night in Ludow at Elm Lodge just outside of town. It was a very nice B&B and it was about a five minutes drive into town. Ludlow was our stopping point between Caernarfon and Stratford upon Avon. We spent a couple hours walking around Shrewsbury. A couple possible stops between Bath and Conwy are Ironbridge and the Pontcysylite Aqueduct. Depending on the route you take, Chepstow has a castle, Tintern has an abbey, and Monmouth has a bridge. There are a number of castles in the area around Monmouth. The drive from Chester to Conwy takes about an hour. Driving times are dependent on weather, time of year and day, and whether or not there is construction.
