We are heading out with RS Belgium and Holland, but hitting Paris first. do we need different sims chips
for each country? France, Belgium, Holland? Suggestions where to purchase in each country?

Dick has given great information and a sim-card is great if you plan to make a lot of calls on your trip. If you plan to just make a few calls or want limited data usage then an international data plan from your provider may be easier in the end. It's always worth checking with them but if you do want a phone to use a lot then the sim-card does give you freedom.
