Dutch SIM card and my Apple ID

Please say there are no dumb questions!

I am visiting Amsterdam and then Italy for 4 weeks. My Dutch SIM card works great, but when my iPhone asks me if I want to change the phone number for my Apple ID, I can't tell if this is a good idea or not. What happens if I don't?

If you don't nothing will change, your Apple ID will still use the same phone number. If you change, it will replace it with your new Dutch phone number.

I thought I had the option to change to the new number or add it to my Apple ID. In any case when I put my ATT SIM back in post trip I was able to change it back.

I think Apple uses your phone number for two factor authentication. So may not be an issue if you don’t login to your Apple account from a new device or computer

It was never an issue, but I never tried to do anything that would have required using my Apple ID.
