Would love input on where the best place to buy a sim card in Paris. My lodging is in the Marias (3rd Arrond.)

Your best bet is probably Free Mobile’s 19.99 € (“Forfait Free”) plan, just make sure you get the one month version, and not the rolling version that’s a hassle to cancel.
You’ll need to use one of their Kiosks to get a SIM and activate it, and they have a map here: https://mobile.free.fr/couverture/borne_interactive.html
