Airalo Install help

So i've been reading and researching and bit the bullet this morning and purchased Airalo for my phone for my upcoming trip to Germany (we arrive there this Saturday).
I'm so confused. Nothing seemed to go as their instructions said.
I have the esim listed on my SIM Manager (Android phone - Samsung Galaxy S22).
The instructions all say to check the APN which nothing ever went to that screen as the instructions said.

Because I have installed early and just want to connect on Saturday when we arrive I'm just now scared to even know if I've done it correct and it will work.
Since it is listed in my SIM Manager, do I just turn it on and turn my normal SIM off on the plane before we arrive?
I think I've read that I keep mobile data roaming turned on? (which means I have to turn off the Normal Home SIM or I will get roaming charges)?
With my normal SIM turned off will I still have access to the apps, contacts, emails etc on the phone? I realize I cannot use text or phone calls.
I'm sorry this is all over the place but I'm in last minute trip prep and have now been working on this for 2 hours this morning when I thought it was gonna be a straight forward 5 minute task.
I did email their customer service and got an auto reply that due to large volume it will be a while before they respond.

p.s. I still have to purchase an Orange esim and install in my husbands phone and am now quite leary to do that after this process.
(using Orange on one phone so we have a phone number to use while there)

I have use Airalo on our iphones, so sorry that I can't speak exactly for an Android. Same as you--the install doesn't go exactly as they say. I've found that all I have to do upon arriving in the country I purchased for is to turn off my regular (home) SIM (You can do this upon leaving the US) and turn on the eSIM. It can take a few minutes for the eSIM to find the local network, so be patient. Sometimes if things aren't working with the eSIM, I toggle my regular SIM back on and be sure that Data Roaming is turned ON. I'm not smart enough to know why that helps, because the regular SIM is off, but everything works after that. Then just be sure to turn off the regular SIM again.

You will have access with the eSIM to anything that uses data on your phone. Yes, you can email.

You can send texts via your cellular data from the eSIM but you are correct in that you cannot make a phone call. And yes, you have access to contacts, apps, emails, etc. on your phone.
