I’ve been trying to find out the volume of alcoholic beverages can safely be checked? Lots of differing amounts.
I’m wanting to include local Colorado whiskey, (3 bottles) honey, jalapeño jams, (maybe a dozen small jars) etc. I’m not concerned about packing them safely: just customs!

I’m pretty sure you’d be limited to bringing in 1 liter of whiskey per person.
I don’t know of any restrictions on jams or honeys for gift/personal use. But luggage weight could rack up fast with all this glass and liquid.
With today’s checked baggage chaos, your bag go has a less than even chance of arriving. If these are important gifts, accept the cost of shipping and be confident they will,arrive.
I tried shipping and they inspected my box at DLS by opening it and said you can not ship overseas! So now I am trying to get $300 of whiskey delivered. I don’t drink whiskey 😬 Post office either

That really depends on when you travel and what airports you transfer through.
I can not ever remember having my bag checked in customs in Europe. I'd give it a shot. Not much to loose.

Customs rules for entering Italy would be different. You’d need to find out how much Italy allows you to import.

Just like the US, the duty-free limit is one liter. You can bring more as long as you declare it at customs and be willing to pay the duty on it, which might not be much. Or they might let you through anyway.
