We are looking for a room with two separate rooms. Many hotels have "family rooms" but all four adults do not want to sleep in the same room.
Is Airbnb my only choice?

You can find 2 rooms for 4 people using Booking.com, but it may take a little work.
Do the basic search with your dates and whatever is important to you on the basic search screen. Look for a room for 2 people.
Filter your results by marking Hotels and B&Bs under Property Type. Use any other filters you want, except the Star Rating one. Instead, choose Review Score. I always pick 8 or higher.
Do this and you will find several options listing multiple rooms for 2. Just select 1 each for you and your friends.
Hotels and B&Bs will probably have websites. Google any that look good to you and contact them directly. They will usually have a place to choose English for the language.
Going directly by email or by form on the website might result in a lower price and the ability to request that the rooms be close to each other. And if your dates are far in the future, they may be shown as sold out on Booking.com, but actually be available. That's what happened to me with the Amsterdam B&B where I'm staying in June.
The place I'm staying has only 2 rooms. By emailing back and forth with the owner, I was able to reserve one of those rooms for 2 nights in early June and again for 2 nights about 3 weeks later. This is where I'm staying: Herengracht 21 Bed & Breakfast. Click on it if you are interested.
