We are traveling to Sorrento in October 3 to 10 th. We plan on taking several day trips leisurely.
I was thinking one destination per day? Thoughts? Recommendations? Also, should we stay in the city center or outside?
We love Sorrento - I'd stay in the heart of town, as that's where all the best views, restaurants, and shops are.

You can probably combine a few of the AC towns in a day trip

Assuming no car you’ll want to be within walking distance of train and bus station-taxis can be pricey in Sorrento

Capri, Positano, Amalfi, Pompeii, Mt Vesuvius, Path of Gods. Any other must see locations? Is staying in Sorrento the whole time a good choice?
You can easily combine both Positano and Amalfi
Don’t miss Ravello-that will take a bit more time if you walk out to Villa Cimbrone ( you should- the views are fabulous)
Naples is right there!!
You can see Vesuvius for almost everywhere
I wouldn’t bother with hiking up

If you stay on the outskirts, you will need a cab or the hotel shuttle (?) to get to Sorrento's excellent public transit options. Yes, there's a price difference. And the hillside might have a nice view, but some downtown places have a view too. View = price, usually. Even hotels built on the Gulf of Naples cliffiside (luxury hotels) charge extra for rooms with views or balconies. At least October isn't peak season (also means hotel shuttle busses might be less frequent. Make sure you find the ferry schedules that match your visit dates.
We booked 3 nights in Sorrento at Hotel Il Nido Sorrento in late October, based on excellent reviews here on this forum, but it is not in town and now wonder if I should regret making that reservation. Throughout the reservation process the hotel owner (family owned) was absolutely delightful, personable and helpful in how to get there, accomodations, etc. We have a room with a walkout balcony overlooking the bay. We are there Thursday through Sunday then taking the train to Rome Sunday morning to start our Heart of Italy 9 day RS Tour. There's a free shuttle from the hotel to the downtown hourly.
