Thank you so much. I'm from New Jersey and It seems a bit difficult to make some restaurant reservations in Puglia. Most of them you can't make online and you have to call. Is it recommended to have reservations and is it easy to find a restaurant if you don't? I asking because we will be in Puglia for two weeks. Staying in different areas. For one,lecce we are not sure what day we will be going to other areas or beach town for the day.

How far in advance to make reservations depends heavily on the time of year. You didn't specify when you're going, but if it's July and especially August, I'd say you should make reservations at least two weeks in advance. And if you're looking for a Sunday lunch, forget it...I'm sure they book months ahead for the summer. Fall/winter/spring will be more flexible and you can probably walk up at lunchtime to make a reservation for dinner.
If you haven't yet seen Jean's recent trip report for Puglia, I highly recommend it. You'll get some good suggestions there.
