You will probably have to do several withdrawals over a few days
Check on your daily limit and have your bank increase it if possible

Aldo Limos, which we used last spring, accepted USD, with a fare exchange rate, and provided a written receipt. The service was excellent.

I believe that Italian law now requires businesses to accept credit cards if the exchange is above around 60 euros. It's been discussed here frequently. Have a great trip.
