I'm going to Italy with the family the first two weeks of June. We are planning on staying in Sorrento for 3 to 4 nights as a home base for Capri, Pompeii. We will then stay somewhere that is a little closer to Paestum.
I'm really having trouble finding the right places to stay. I need a king or queen bed and 2 singles and would prefer a 2 bedroom apartment or hotel family room that includes breakfast since it is so delicious in Italy!
Does anyone have a recommendation that would meet my requirements in Sorrento?
Also does anyone have a recomendation of which town to stay in along the A.C.?

For your room/bed query, I recommend Booking.com. Read reviews for breakfast info--I have found sometimes it is a fabulous spread, and sometimes it is coffee and a prepackaged pastry.
For being in reach of Paestum, Salerno is the most convenient, but it is a small city and not a village. If you wanted the Amalfi Coast experience of a coastal village, I would recommend staying at the mainland end so it is not such a long day to get to Paestum. Anything from Minori to Vietri would be fairly simple. See the travelmar website to choose a town with ferry access, which is also recommended.

I have stayed at Hotel Regina Sorrento when i toured AC 2 years ago. Perhaps, you might find it appealing for lodging. It has a wonderful view of the Meditarranean, cozy courtyard, and a pool.

After over a dozen years staying there for about a week at a time, I heartily recommend Hotel il Nido (ilnido.it). Breakfast? Try the machine that squeezes the oranges for you - doesn't get much better than that!
