Cooking classes in Florence and/or wider Tuscany region

Hi All!
I'm looking for updated info on cooking classes in the Tuscany region. Previous posts are over a year old. Anyone with more recent info on one day classes in Florence, Sienna and surrounding area? I'm planning a 2-3 week trip with my mom and we'd love a chance to cook with a fun, English-speaking (not necessarily fluent), local.
Thanks in advance for any ideas!

Megan, not all of the suggestions are over a year old, and a year is not that long ago where reviews on good classes are concerned. :O)

I'm sure you'll get some responses but here's a place to start?

I have enjoyed www.cookeatitalian.com. The classes are held in Manuela's kitchen in Florence. She is a delight and speaks very good English. We have taken classes on two different trips. The first class was with my daughter and a friend. It was one of the highlights of our trip. I went again last year with my mom and once again I had a wonderful time. I have actually made several of the dishes at home that I learned from Manuela. I highly recommend her.

Extra Virgin Cooking School in Lucca - I took the class last month and thoroughly enjoyed it. Giuseppe starts by shopping at local bakeries, fruit/veg markets, etc., and then conducts the class in his apartment right in town. The menu varies depending on what's fresh and local. Great experience.
