I know after arriving in Rome, I will be very tired. I don't know yet the time of arrival. My question is, if I have time for an aperitivo followed by a casual yet authentic dinner where the locals eat (not touristy), and maybe a view of the sun setting, where do you recommend? Somewhere close to Monti neighborhood please.

If you're staying in Monti, I would ask the hotel / Airbnb host for a nearby restaurant. By 'touristy' if you mean other travelers, the chances of you not seeing other tourists like yourselves in the heart of Rome are very low. Unless it's January! ha. We don't eat on main walkways through busy areas, or anywhere with someone outside waving around a menu. Good luck!
