Has anyone ever taken a vegan cooking class or Rome or Florence or environs?
No, but Google the topic and you will find them. We took classes in Venice from a well known author of many cookbooks. When we mentioned vegetarian, vegan, gluten free she would roll her eyes and mutter something in dialect that she said should not be translated. But, that was a while ago and things change.
No advice but that sounds exciting. Let us know what you find if you find anything!
We took a wonderful non-specialty class in Rome with Chef Andrea at Cookingclassesinrome a few years ago. You might want to check with him and see what he offers now.

Fantastic vegan cooking school in Lucca. I was lucky enough to have found this school https://www.gioiadivivere.it on google. This lovely family gives classes in vegan cooking. They are lovely, speak English and I cannot recommend them highly enough.
