FLORENCE - good places to eat

We're visiting Florence for the first time later this month - I'm goggle-eyed from both reading and watching reviews of various trattorias and osterias and would really love to ask if anyone can recommend a nice place to eat for dinner that offers more than just meat and offal dishes for the main courses and pasta dishes for the first courses? I don't particularly like pasta (don't all boo me at once!!) and I don't eat red meat - does this rule out any decent options for me? all suggestions gratefully welcome!

Our last time in Florence, October 2022, we stayed in the Oltrarno neighborhood, on the opposite side of the Arno River from the main city. We were delighted to find a fabulous seafood place, Burro & Acciughe, at Via dell'Orto, 35/R . Its name translates to Butter & Anchovies, but everything was wonderful.
