Not much has been posted about distilled water for CPAP machine in the last 5-6 years. Has anyone had any issues with finding this water in either country? In past posts, it was mentioned that it has been found in pharmacies and it has difficult to find it n them as well. Hate to lug it around for 3 weeks only to find I can’t use it.

No, you won't find it.
Tap water will be fine. Distilled water is promoted because it prevents the long-term build-up of mineral deposits -- that won't happen in three weeks.
If your CPAP will work without the humidifier, consider leaving it behind and using a heat moisture exchange filter. Not as good as the humidifier, but good enough, and less weight/volume to bring. They're inexpensive and fit in-line between the hose and the mask.
I just use tap water when I'm overseas. Fill it with white vinegar or citric acid when I get back home and let it sit for a couple of hours to remove some of the scale buildup. No problems.

Consider bringing an extension cord, or buying one after you arrive, you won't always find an outlet near the bed.
Great idea about an extension cord. Most of the time there there is not and we would need two outlets
We were able to buy distilled water in small towns in Italy but not anywhere in Great Britain.
For only three weeks I would use the local tap water
