anyone traveled with a one year old in the summer? suggestions on itinerary?

What do you like to do/see? How long are you going? Where are you flying in and out of? Will you have a car? How many people are going?
You need to give is a lot more info :)

On your General Europe thread, which has a bit more background, you say that you don't really want to drive. But Ireland is a place where driving really adds convenience, especially if the 1-year-old is along for this portion of the trip. Train service "spokes" out from Dublin to a few other cities, but does not run along the popular coastlines, so your choices there are rental car or bus. See Rick's Ireland overview.
