Where to for a Last Minute Trip in May?

Found out that my husband will be heading to Germany for a business trip near the end of the month. We're thinking of taking a vacation at the end of his trip and for me to tag along. It will be a short business trip (about a week or so), and we'd like to take an additional week to travel somewhere in the mainland Europe.

We've traveled in Europe multiple times before but we're no where near experts, so we're a bit lost on where we should go this time of the year, early to mid May. Could you guys give us some advice on which location sounds better/worse or give us some suggestions if you have any?

Places we're considering: Provnce in France, a city or two in Italy (excluding Venice since I'd like to go to Venice during the Carnival season some other year), Netherlands (tulip season)

If it helps, we've visited the following places and we'd like to go somewhere new, preferably a new country: Paris, London + other cities in England, Edinburgh, Ireland, Prague, Vienna & Salzburg, Iceland, Germany (mostly Bavaria), little bits of Austria and Switzerland.

If it helps, I was considering Provence in May but decided against it because the water temps are still quite cold. I changed my plans to a loop through Burgundy/Alsace/Champagne and will go to Provence in September instead.

@Jazz+Travels: I don't think the date will be an issue but we'll definitely keep that in mind. And the link you provided is awesome.

@l.p.enersen: Rome did come up when we were thinking of covering a city in Italy. Italy has so much to see, it would be nice to knock a city off of our list for the future.

@Brad: That sounds like a great route. Will you be driving a car? (How is driving in France outside of big cities in general?) A quick Google search on the cities brings up wine-related results. Will it detract from enjoying the areas if we don't know much about wine?
