Just one? Without knowing you, and unless someone has visited all of the possibilities you mention, that will be tough. That said, one enthusiastic vote for Barcelona!

Dartboard is a good idea, Nigel!

Since you mention food, hiking and art, why not Italy? The best food by far in all of Europe,k great hiking in the cool cool Dolomites, and need I even go on about the art?

How much time do you have?

Barcelona hits all those!

But I have not been to Iceland. If I were traveling in the summer I might make it a point to go somewhere that would be less fun to do in the spring/fall. So I'd also consider Iceland.

Iceland or Scandinavian/ Nordic countries - too hot anywhere else at that time. You'll get the benefit of really long days as well.

My votes are for Berlin for fun alcohol, walking, and world-class art. Plus, the history is everywhere. I was there in June and temps were very mild and even coolish.
Then, for the Scandinavian cities for the reasons already mentioned.

Have fun!

I've been to all but two of these....
IMHO
Oslo has the best independently roasted coffee. It is also extremely walkable with a great tram system for longer distances. I also love the National Gallery...Munch, "The Scream", and lots of beautiful pieces that are unique to Norway.
Barcelona and Provence have the best food.
I'll be in Copenhagen all next week so will let you know!
Berlin has great nightlife therefore "fun" alcohol.

It sounds as if you'd like to tour Scandinavia. We were there a year ago, and I can tell you it's a deathly expensive place to travel on the ground.
But we hit Warnemunde, Germany, Tallin, St. Petersburg (2 days), Helsinki, Stockholm and Copenhagen by cruise ship--the bargain in Baltic travel. Then we flew for $87 to Oslo and took a Norway in a Nutshell train/hydrofoil trip to Bergen, Norway where we flew home from. \
The trip was a bargain for what many people would call a trip of a lifetime.

It depends on what yo like most.

July/August are very good for certain places. Scandinavia is best then. Another choice might be the northern or north facing beach areas (Normandie, Brittany, Basque coast of Spain, etc.).

I love Copenhagen - IMO the best city in Scandinavia. It has the most to do, great for walking/biking and great public transportation.

July is also a good time to go to Island locations like Greece or Spain's Balaeric Islands - when the party is in full swing.
