week and a 1/2 or so in Europe - itinerary suggestions

My son is graduating from the University of Glasgow in late June and my husband and I will be coming from the US for the graduation and a few days in Scotland and then 10 or 11 days of travel. Trying to keep it pretty budget (we had 2 kids in university this year!)- hostels or airbnb, flying into Scotland or London and out of somewhere else. Plan to keep it to probably only one other flight in there. It is our 25th anniversary though so a splurge or 2 might be nice. Would rather avoid places with lots of tourists at the time of year. Probably more city/towns though a day or two in the "country" might be nice - we like history, good beer (not clubbing), meeting people. Probably no more than 2 or 3 location to limit travel time and I really don't like hot weather. We have traveled to the UK multiple times and have been to Belgium, France and Germany so looking for someplace else. Some place we have been thinking about - Scandinavia - but is that going to break the bank? Prague and somewhere else near there? Other thoughts? THANKS

Ah you missed ,,,Prague of some years ago,,i hear its super touristy now..

Dublin and surrounding southern Ireland might be nice..
Spain, we visited a really adorable small town , only 1.5 hrs by bus from Barcelona, look it up ,it beatiful, you could visit several like it along the coast,

My first thought was Ireland. You can see a good bit of it without driving. Dublin and Belfast are well-connected by train, so you could spend 2-4 days in Belfast/Derry and a day trip to Giant's Causeway, then Ireland. Dublin has lots to see and do, including theatre, and day trips to the coast. Ireland is very easy on the pocketbook. People are extremely friendly and love to chat. Beer, well, you can taste hundreds and every pub is different, many with live music (most trad, but lots of variety), cheap, tasty food and smiling faces.

Another low-budget suggestion is Krakow-Warsaw-Gdansk.

You could go to Prague and Vienna. Or Vienna and Budapest. I think 10-11 days is not quite enough to see all three, but that would be a great trip for 12-13 nights, especially if you want a day or two away from the big cities.

Berlin

Loads of very good ethnic restaurants in these cities will help you keep costs down.

Croatia
Wonderful coast and beautiful towns (which get a bit repetitive after a while)

Berlin and Saxony or Baltic Coast or Harz mountains
Berlin is cheap and not that touristy, and the other three are perfect for your anniversary

Galicia
Probably the least known region of Spain, but to me the most beautiful one.

The Southern European schools all finish for their summer holidays mid June, so these parts will all be busy and at peak prices.

Hot weather and busy with tourists rules out Italy, Greece and southern Spain. Scandanavia is expensive.

Northern Spain such as Asturias and Galicia would suit. Alternatively, fly into Porto and cover northern Portugal. Gorgeous scenery and the Douro wine region. I like Croatia, but it may be too hot and busy in late June.
