Looking for options and things to do in Regensburg, Nuremberg, Bamberg, Wurzburg and Wertheim. Is it worth skipping Regensburg to go to Munich—is it possible to cover in a day?

There’s enough to do In Regensburg to keep you busy for the time your there. If the boat pulls in where it did back in 2015, you can always go over to Wurstkuchl sausage for a sausages and sauerkraut. Supposedly it’s the oldest restaurant in Germany. Back in 2015 it only accepted cash.
In Wurzburg there’s the Residenz and Marienberg Fortress.
In Nurnberg there’s the castle, the old town, hauptmarkt, and the area around Heilig-Geist-Spital and
Maxbrücke. Of course there are the Nazi sites, some of which you pass on the tour Vikiing provides.
IMO, you wont have a whole day to cover Munich when you look at the time and logistics to get there and back, and no it's not possible to cover a whole major city in one day. Imagine trying to see New York City in a few hours.
We loved our river cruise Amsterdam to Budapest. Plenty to do in Regensburg. All those stops are wonderful just to walk about. Find a place for a beer and pretzel and people watch. You pay top dollar for river cruises to visit those easily accessible places without so many trains or buses.
Munich needs several days, perhaps you can visit by train after Amsterdam.
We did this tour in 2018. We were traveling with another couple and we decided we’d try a bunch of the different optional ($) activities. Also, we arrived in Budapest a few days early and were able to do many of the optional activities on our own: Hospital in the Rock, Dohany Street Synagogue, Grand Market and thermal baths, so opted for the Hungarian Horseman. It was wonderful to see the countryside,,but if you haven’t any additional time in Budapest, I’d do one of the other things (on your own or with Viking).
In Vienna, the boat was docked away from town and we should have been braver about public transportation. The other spouse wanted to see the Lipinzzaners and that turned out to be less than satisfactory. We just walked through the barn and looked at the horses. Schobrunn Palace got raves from those who went.
In Passau, some went to Salzburg and we took the Bavarian Cruise & Baroque Scharding. That was fun. The group that went to Salzburg were pretty vocal that it was too much time on the bus.
We did the Sausage making activity in Regensburg and that was interesting. I think we had lots more fun than those who went to Munich. Again, it’s a long time on the bus. There is lots to see if this city.
On the Wurzburg day, we took the tour to Rotenburg on der Tauber. My husband loves Christmas decorations, so he really liked that activity. There was enough time for some to walk the walls around the city. I’m not sure if every group does this, but our tour guide had the bus stop on the way back and walked us through the palace. That turned out to be one of the highlights as there were few people there at the end of the day.
The one other thing we especially enjoyed was the Kinderdijk Windmills and Cheese Making tour. It was a nice drive to the dairy farm and then fascinating to see the farm in action and how invested they were in their cattle. The cheese was delicious.

We did a similar route on Gateway but Budapest to Prague. We took the option of an extra 2 nights in Budapest and were very glad we did. We were able to enjoy and see more things at a leisurely pace. We also did not return to the boat after the am tour for lunch, but made our own way back after doing more sightseeing (departure was at 6PM). As other have said, the people who took the day in Salzburg tour were very unhappy - it was a lot of time on the bus. We enjoyed a leisurely day and lunch.
It was our first river cruise and we loved it. We made sure to wake up to see the ship go thru the locks and enjoy watching the world wake up.
