Should I use euro or american dollar's in Europe?

If you mean in daily commerce, you have no choice. You must use euros in the euro zone with reputable merchants and lodgings.
Using dollars in Europe is just as easy as it is to use Euros in Tacoma.
Also there are still more than just few countries in EU which are not using Euro and certainly not dollars.
Paulette, As the others have said, absolutely use Euro's!!! Note that if your trip will include Switzerland, the U.K. or some of the eastern European countries, the currencies will be different (Swiss Franc, Pounds Sterling and various currencies in eastern Europe).
Always always always use the local currency whenever you travel abroad. The reason is that even in the very unlikely event that an overseas merchant will accept dollars, he will never give you an exchange rate as good as what you'll get from an ATM.

Since the dollar is worth much less than the euro, the locals don't want our dollars. Euros please.
