I've been to Italy and used a Tim SIM card and France and used Orange. This time I will be a week in Spain, a few days in France and over a week in Italy. Can I get a SIM card for data, text and phone in Spain that will work in all 3 countries?

Yes, any SIM you get will work in all three countries. You do need to make sure you can add minutes, if needed, in the other countries, though. Last year, I was going to buy a Vodaphone SIM in Scotland, but didn't because I found out that, while it would work in Spain (my next stop), I would not be able to add minutes while there. Apparently, UK Vodaphone is not the same as Spain Vodaphone. There are a number of differently companies, and they don't all have the same rules.
