Travelling from Zurich through to Vienna in October

Hi folks!
My wife and I are planning on travelling from October 8th until the 16th, into Innsbruck then to Salzburg, and finally into Vienna.
We will be travelling by train from each location to the next, so we don't want the option for a car rental. We love walking/hiking, and taking the "scenic" route.
My questions are pretty simple:
1. How many days would you recommend to stay in each location?
2. Where would you recommend staying in each location? -- options are AirBnB or Hotel
3. Eating and Drinking -- As much as we love the adventures, we also love food and beer/wine -- Recommendations?

If anyone has done this trip, feel free to share your itinerary or plans if you're willing to :)

Thanks in advance for helping us out.

I'd suggest a smaller town or village in lieu of Innsbruck. Seefeld comes to mind. The alps are best in the villages, not in the larger cities you have in your itinerary. I'd suggest cutting Innsbruck entirely and staying in Salzburg for a few days and then staying a few days in St. Gilgen on the Wolfgangsee in the Salzkammergut.

I am confused about your dates. Are you planning to do Zurich, Innsbruck, Salzburg and Vienna all from Oct. 8 - 16? Four places in eight days?

Thanks Emily!
To clear up the confusion: We are travelling out of Zurich on the 8th, so we will arrive in Innsbruck on the same day -- three places in eight days.

If you are more interested in outdoor activities and sites, I recommend you spend most of your time in Salzburg and the surrounding rural areas, including Berchtesgarden, Hallstatt, and the Wolfgangsee area, where you don't need a car to visit those rural areas. Vienna is large city with more city sights. I have not visited Innsbruck.
