I had a trip planned for May and June to the U.K. Obviously the plans changed. My insurance was RoamRight. Their website says call and you can change dates/destination/etc. Today I called, they forward dated my insurance one year and said to call and change the dates to 'actual' dates of travel when trip is rebooked. It was very easy and I am pleased with their customer service.
My Nationwide travel insurance allows similar date changes, up to 18 months from the original schedule.
I've followed their process to request a refund for my May trip, which they indicate may be possible since our tour was cancelled (as opposed to us having cancelled.)
For my fall trip to Poland, which isn't a tour, I plan to change the travel dates for the insurance, as you've described.
I brought Travelguard AIG Gold for a UK trip scheduled for July/August. Travelguard is giving out vouchers for insurance that was purchased more than 15 days ago (A refund is given before the 15-day window). All I had to do was go to the site and request the voucher. The email/voucher took about 2 weeks and has an expiration of 05/05/2022. Which I thought was generous.

You can chose coverages that include medical insurance, medical evacuation, trip cancellation or interruption and more.
If you book the insurance within 14 days of booking the tour, you can book cancel for any reason insurance. It is more expensive, but provides that special coverage that may be needed with the travel future unknown because of viruses.
