I use google maps, but if I’m driving I always add some time to whatever the app says the time between distances is.

If you are looking for suggested itineraries, Rick’s books give those. If you’re looking for a multi-country trip, start with Europe Through the Back Door. He has suggestions based on different # of days. Generally you will save time by flying into one city and out of another, to avoid backtracking to the original city. For example, fly into Paris and out of Milan. This is sometimes called an “open jaw”, but the airlines usually call it “multi-city” when looking for flights online.
