Is it true that we won't see any scenery if we take a day train from Lyon to Florence? Any other considerations re: day vs night train?

It is true. and there is no night train service there is a night bus direct to Torino . It does not look like it would be fun.
You could go to Dijon from Lyon and catch a night train to Milan and then change trains for Florence
