Which is the best train service from Zermatt to Munich, and then a week later from Munich to Zurich?

Most likely Zermatt to Visp, change trains, Visp to Zurich, then
change trains, Zurich to Munich.
From Munich, (direct) train from Munich to Zurich HBF. There are
nonstop trains as well as options with changes.
Not sure what you mean by best, but this is the most direct.
For the Munich/Zurich section, you have a choice of Deutsche Bahn
or OBB. It's a ~3 hr trip nonstop, so I'm not sure it makes much of a
difference which carrier you would use, if price is equal.
For your specific dates, use thetrainline.com to easily check options.
