In Edinburgh in 2023 we enjoyed the Secrets of the Royal Mile tour with Mercat Tous. They have several tours to choose from.
We (group of 4) did a two-hour walking tour of Edinburgh with David Wheater. He is an Edinburgh native and passionate about the city. He was a highlight of our trip. You can find him at davidwheater.com He also has a youtube channel, so you can search his name there and see his various videos.

Sounds like a great trip! I don't have information for a tour guide specifically for Dublin but will say that my friend and I were very impressed with Wild Rover Tours when we visited Dublin in April of this year. We used them for an excellent day trip from Dublin to Kilkenny, Wicklow Mountains and Glendalough that included a sheep farm and sheepdog trials. It was the highlight of our trip, and this is coming from someone who doesn't generally like tours.
