My girlfriend and I will be going to Spain for two weeks, how much spending money would we need, hotel and airfare not included, we plan on staying in Toledo but traveling to Madrid, Sevilla, Salamanca, Avila, and Segovia

That is a nearly impossible question to answer -- it depends on a whole bunch of stuff. But a $100/day/person is not unreasonable.

As Frank mentioned, that's a very difficult question to answer, as none of us here have any idea on the spending habits of either of you. Generally speaking, an amount in the range of €75-100 per day should be adequate.
Some clarification though - are you planning to take all of your spending money with you when you leave home? My suggestion would be to take some travelling funds with you (perhaps €100 or so) and then withdraw money from ATM's as required.
