Hello. My husband and I will be in Vienna for five days the first week in December. Trying to plan the last five days of our trip to a city in Europe we haven't been before. Our options are Tallinn, Venice or Edinburgh. We're not interested in museums, but rather will be visiting for the Christmas markets, good food/drink, historical sights and relaxation. Pros/cons on either city. I know ultimately it's our choice but we'd appreciate input from those that have been to those cities. Thanks!
Why fuss with flights ? Take the train to Venice via Innsbruck and Verona.

You just described Budapest, 3 hours and 29 euro south on the train.
I have not been to Tallinn, Venice or Edinburgh, so I can't help with that decision, but I can second James in saying that Budapest is a great city to pair with Vienna. The train between the two is cheap, easy and relaxing. We did that last year from Christmas through New Years and the Budapest Christmas Markets were my favorite. We also loved the food and relaxing at the baths (think big heated outdoor swimming pool full of laid back people soaking - so relaxing). If you have not been there, you might want to add it to your list of possibilities.
We did your trip last December. We paired it with Krakow and Prague. Both easy cities to get to by ground transportation and has what you're looking for. Were not into museums either but we loved sights in both cities as well all the festivities going on that time of year.
Krakow is "easy" to get to but at least 5 hours from everywhere.
We were in Budapest last December and Kraków the previous December. Want to visit a different city this time. Tried looking into the train from Vienna to Venice, the overnight train, but having difficulty in securing reservations.

I'll second what James E said. We spent five days in Budapest last December. It checks all four boxes on your list. And so does Prague. If it were me - for five days - I'd pick either of those cities over the three you're considering. As an aside - if somehow you chose Prague - I can't recommend enough using a car service to get from Vienna to Prague with a four or five hour stopover in Cesky Krumlov.
