We are contemplating a booking which has us staying one week on the Costa del Sol and one week on the Algarve.
Can anyone tell me what to expect weather-wise? We will be there October 15-30, 2016.
Also any suggestions for highlights to not miss while in both places?

I suppose you like going to the beach. I think there is far more interesting things to see in Spain and Portugal than going to the beach. You can go to the beach many places in the World.
Consider going to Seville and Granada, which is close enough to the beach in Spain, if you insist on going there. Better to spend some time around Madrid as well.
Also, for Portugal, Lisbon is great, then move north after visiting Sintra and Obidos to Porto. Porto and the Douro Valley are fantastic.

Geovagriffith said exactly what I was thinking. I can't imagine going to the Iberian Peninsula for 2 weeks and spending all the time on the coast. I hope you've selected your destinations carefully, because some of those coastal areas are grotesquely overbuilt and not remotely attractive. A guidebook would be helpful in making the best choices for a beach vacation if that's what you want.
