Our itinerary includes Nice at the moment, but I am afraid we have to much packed into a short amount of time. Would it be a bad move to skip Nice?
It would be a better move if you skipped Barcelona (I've been reading your other posts).
Nice is nice enough but it's not a blockbuster. It's best enjoyed as a destination, not a stopover.
Nice will always be there, and great for a 2nd or 3rd trip, but IMHO, skip it.
I would say it depends on what you like. I didn't care for Nice itself, but loved Villefranche-sur-Mer (tons of character), seeing Monaco for the experience, going up to Eze, and seeing the area. I thought Nice was just another crowded, overwhelmed-with-tourists place, but then, I don't care about the beach scene. Have never been to Barcelona, so can't comment. I do agree with the previous comment that you can go back, though. When we have overbooked ourselves, we've regretted it. Take some time to savor . . .
But no matter what you do (too much or just right), you'll have a fabulous experience to last you a lifetime. Enjoy --
