Looking for recommendations on the best town to stay in as a jump off point in Southern Ireland. I am currently leaning towards renting a self catering cottage for the nine day trip, so I would need to be able to return each night from the days activities. Thank you.

We stayed in a self-catering cottage in Kinsale. It was great and you can get to Cork, Blarny, etc quite easily, as well as tour the south coast.
My sister booked this from Scotland and she found they only seemed to rent them saturday to Saturday, so take this into account when you make your plans.

I just realized that you are probably referring to the counties, not Cork town, so Kinsale would definitely work for you.
We also stayed in one in Ventry (in Kerry County, outside Dingle Town.
