Saturday Night in...? Amsterdam, Cologne, Bruges?

Hello All,

I will be on a 3 week business trip flying in to BRU in March, with hotel stay in Sint-Niklaas, Belgium (North of Brussels). I have a rental car, and I'll have two weekends for a Saturday night to spend elsewhere. I plan on leaving to my destination early Saturday morning, and returning Sunday evening to Sint-Niklaas.

I'll be exploring solo, I'm a big foodie, I usually enjoy wandering around new cities that have a vibrant mix of urban/history.

Which two do you recommend?

Amsterdam. No doubt. Good mix of everything you're looking for. Very walkable. Take the train to avoid parking troubles.
Brussels is a urban disaster with a few nice spots. Cologne has largely been rebuilt after disastrous bombings in WW2.
