Rome connecting flight

I have seen a few similar questions, but everyone's situation was a little different. I have a 3 hour layover at FCO, I am arriving on a delta flight from USA and taking a sky express flight to Athens. I would need to collect my luggage and go through border control since I'm coming from a non Schengen country, and get my luggage checked in again for my new flight. From what I see both Sky Express and Delta use Terminal 3, I have heard that somtimes the baggage claim can take forever at FCO, but I'm hoping that won't be the case with Delta. Is this too risky? I just booked the flight to Athens so if it is too risky I might cancel and try to rebook. Thanks!

It sounds as if you are traveling on two separate tickets, correct? That's a lot riskier than a single ticket, because if the Delta flight is late, canceled or rescheduled Sky Express will just pocket your money.

Your plan does not give me a 'warm and fuzzy' feeling.

Getting a single ticket from the US to Athens the only sure plan to make sure you are not the one holding the bag if something goes sideways.

IF things work as they should, it it a doable time frame.

Can you condense so you have carry on only? That would reduce a major time consumer .
