Rollin' down the river...Rhine that is!

Heading from Amsterdam to Vienna, but haven't been to the towns between (Cologne, Koblenz, Rudesheim, Wurburg, Regensburg, Nuremberg, and Passau) We have our hotels, but any recs for
sites, cafes , etc. would be appreciated.

Make sure you have dinner in Rüdesheim. Many of the restaurants have live Schlager music performances nightly. Stag and bachelorette and post-wedding parties from Frankfurt and Wiesbaden tend to filter in as the night goes on, so things can get quite fun.

Don't ask me the names of the places, but I've had good meals at the old hospital in downtown Nürnberg. You can't miss it, it's the attractive old building clearly visible from the bridge over the Pegnitz river, just before you reach the Markt. Another restaurant that has a great atmosphere, although I can't remember the food, was an outdoor restaurant on the city wall, about a 10 minute walk counterclockwise along the wall from the Hauptbahnhof. If you visit the Dokumentationszentrum Reichsparteitagsgelände and need to get the Nazi taste out of your mouth, there's a delightful beer garden almost next door.

Cologne's cathedral (Dom) is great. Next door is the Roman museum. A block or two over is the old city hall. In the area are good restaurants. The local beer (and language) is Kolsch. Not too far away is Bonn, a nice little town I've always enjoyed.

Koblenz for me has been a place to change trains more than sight-see.

I love Wurzburg. Certainly check out the Bishops Palace (Residenz), chapel and gardens.
