If you're looking for an apartment, there are several recommended rental agencies for Paris. We have used VRBO successfully. (www.vrbo.com)
I also recommend vrbo.com. I have used that website both in Europe and the U.S. How old are your children? I may have a suggestion for you, but it would depend on their ages.
We were there last year for Christmas and it was wonderful. The sites are really empty, as fewer folks are traveling and the locals are prepping for the holiday. I was in Notre Dame for the first time when it was not just jammed with peopleit really felt like a church. There are lots of Christmas markets, etc. We took a ride on the Concord ferris wheel one night and it was beautifulnot only did you have the regular lights, but the Christmas ones also. One word though: IT WAS COLD! I mean bone chilling cold. I never wear hats, and actually had to buy one because I was freezing. Gloves, hats, scarves, boots (I even bought wool socks to keep my feet warm!) The other thing we ran into was that a lot of restaurants close on Christmas eve and day, some also on the 26th. Plan to cook your own holiday meals!
We usually use VRBO and Homeliday.com for our EU vaca rentals. You probably will have to find a couple of apts.
