We have one way tkts to Europe. We need returns but don't know when yet. If we buy unrestricted tkts and then cancel them upon arrival, will we have any problems when we are ready to rebook and return home?

I have to say, your motives will be in question.
You could have purchased refundable round trip tickets, then changed return dates at ease. If you have no intention of returning, and do as you are proposing, then yes, you are likely causing concern. You still need to adhere to any visa or visa requirement waivers, that will be evaluated on exit.
