Recs for January travel (Europe)

Hi. I apologize in advance for what could be a vague question. My husband and I have a week off in January (it's what our work schedule's allow). We want to travel and in general we love Europe (however we are open to other ideas!). We are active. We want to go somewhere where we can see the sights and enjoy things. We have been to London/Paris in February, when it was 40/50's. We are OK with chilly weather but maybe not like WINTER conditions. Does another have any recs? Or European destinations that are tolerable in January or maybe even ideal for that time of year? Maybe there aren't any, but I figured if there were, y'all would know.

Some of our thoughts:
-Spain (Seville, Barcelona, Grenada)
-Southern Italy
-Greece (not sure where)
-Portugal
???

Spain’s Canary Islands are warm in January with TENERIFE’s daytime highs being 69 degrees and ocean temperatures at 70 degrees. The island of TENERIFE is a $50 flight from Madrid taking 3 hours.

We enjoyed Dresden and Prague in January. Sort of the same, but we enjoyed London, Edinburgh, the Grampians, Normandy, Paris and Amsterdam in February.

You have good options listed. Yes to Spain (I'd just do Sevilla, Cordoba, the white hill towns, maybe Grenada. Barcelona an outlier for only one week.)
Sicily...will take the whole week.
Portugal...easy to fill a week with Lisbon, Porto, Evora.........
Greece, I am unfamiliar with

We enjoyed Malta in January. It’s not beach weather but we had some t-shirt weather, some long sleeved days. Evenings were cool. Get rooms with heat.

You can fly to the Canaries cheaply from just about anywhere. I flew from Dublin in January for next to nothing.
At this point, I would see where the airlines want to take you (meaning what's the best flight you can get?).

I went to Spain between Xmas and New Year's once! I don't know if it was unseasonable that year, but I'd say it was chilly definitely verging on cold. I have photos of myself standing in front of orange trees in my winter coat and remember being surprised about that. Still, there were few other tourists around and we had a good time. Especially enjoyed Cordoba and Toledo, which I don't see on your list.

I am not a big fan of visiting Europe in the Winter.

A great place to visit in January is Egypt. The history is amazing and the weather is nice in January. Take a tour with a Nile cruise and a few days in Cairo. We used Gate 1 Travel for our trip two years ago.

What is "one week off" and how many nights would you be on the ground at your destination? For myself, with such a very short trip, I would pick a location that I could get to with very direct flights that don't eat up two whole days of my time (I don't know where you're flying from). For me, that would rule out most Europe destinations as even the most direct flights are 9+ hours. Maybe browse the "beyond Europe" part of this forum for ideas - for example, Central/South America may be better options if weather is your main factor.
