Difficult to advise without knowing your time frame and your interests. Once you have figured out what type of travel interests you, you’ll be able to ask more targeted questions and get better answers. Bear in mind that your daughter will have likely done done traveling during her study abroad program and may have specific areas she hasn’t yet visited in mind. She may also want to revisit some favorites with you, acting as your tour guide.

Larry I did Bali last year, it was wonderfull! Judging by my Facebook feed it is also a popular destination from Copenhagen.

A key factor (besides heat, even in Scandanavia) is that August is, religiously, the vacation month in Europe. It affects crowding, hotel vacancy, and fine dining seasonal closures. That's not a reason not to go, especially since you are flexible. Last September, I flew from Copenhagen to Düsseldorf, the second-largest airport in Germany. While we were to be in Baltic Germany and Copenhagen in 2017, I thought of our first visit to Poland. But the planes were not convenient enough for fixed aspects of our vacation schedule.
