This is our first time flying to Europe. We leave from Miami to Frankfurt to Malta, changing planes in same terminal. Do we have yo go through immigration in Frankfurt then again in Malta?
Just Frankfurt which is where you enter the Schengen zone. Malta is also in the Schengen zone so passport control is not required.
Read this part of airport website (section border check):

As has been stated, you will go through immigration in Frankfurt. The flight from Frankfurt to Malta is like a US domestic flight. You just get off and head on out.
If this is on one ticket, and you have checked luggage, it should be tagged straight through to Malta so you don't have to get it in Frankfurt.
We’ve flown to FRA three times, twice with flights beyond on the same ticket. A few bits of info for you
- Many flights terminate far from the terminal and you transfer to the terminal by bus. You get to the terminal perhaps 20 to 25 minutes after the plane comes to a stop.
- You walk - or run - some distance before you get to Passport Control.
- Unless you are traveling on an EU country passport, the line at Passport Control takes some time. 15 to 45 minutes in our limited experience.
- Then you get to walk or run from Passport Control through the terminal to your departure gate.
- Terminals are large. This is a HUGE airport.
Based on our limited experience, I’d say that 75-90 minutes at FRA is a very tight connection. I don’t know whether yours is more or less. An hour is likely inadequate. Two hours would allow you to make your connection without running through the airport, if your arrival is on time.
