Overnight train Aug 27 Munich to Rome (or Salzburg to Rome). When I started planning this trip, there was a NightJet train from either Munich or Salzburg to Rome (traveling Aug 27). Now, I can't find any overnighters! Does this have anything to do with the strike? Or did I wait too long and the trains are likely full? I tried checking trains in the future and got the same message. Any advice is welcome.
Your train on August 27 Salzburg to Rome appears to be available from Salzburg on the OBB site
Where are you getting your info? bahn.de and trenitalia.com websites show an 8:10 pm NightJet train from Munich to Bologna on that day, connecting with an Italian train from Bologna to Rome; arrive Rome 8:37 am.
Yes, but when I try to book the train on DBBahn, from Munich, I get the following message:
We are sorry, but we can not sell your requested journey online.
You may be able to get the ticket in one of our DB travel centers, authorised DB travel agency or via phone: (0049) 180 6 99 66 33 (20 cents per call from a German landline, max. 60 cents per call from a German mobile network; costs for calls from abroad depending on provider) daily from 00:00 to 24:00.

OK. Your original question indicated you couldn't find the train. Book on nightjet.com or the oebb site mentioned above by Jazz. Enjoy your trip!
Thanks for the heads up on a different website to go through. NightJet does have tickets available.
The DB website only sells tickets for DB and other German operators. Even though its website has most trains in Europe listed. Great for looking up times Europe-wide when you don't know who the operator is, not so good for buying tickets outside Germany.
This train is a Nightjet, operated by ÖBB (Austrian Railways).
"Or did I wait too long and the trains are likely full?" - this appears to be a common misconception of tourists. Trains do not get full that far in advance. Many tickets will be sold on the last week, if not on the day. For day trains, turning up at the station and buying a ticket for the next train, or buying it on your App, are common.
In many cases tickets only go on sale 60-day days in advance.
My confusion was that I HAD been able to book this trip on both DB Baun and Loco2 (but I didn't finish booking) and then...suddenly I couldn't. Messages like "Unable to book" showed up. I thought it unlikely that they were full...but who knows? With the internet, I'm just not familiar with how quickly these trains fill up. It's a new world from the 1980's when we just showed up and tried to get tickets. Out of luck if they were full!

A lot of people still work that way. The only option you have from a different country may be the internet. Lots of people still go to a station, buy a ticket and get on the train.
