Any suggestions for a place to go in Southern Europe during the last week in October for R&R and scenery rather than city life and sightseeing?

Islands of Greece : in the Cycladic island group, or Crete.
Alghero in Sardinia.....ahhhh
The Greek Isles is not the best option because many of the islands begin to shut down by mid Oct. Airline schedules change, tourists go home, and the hotels begin to close down. So you need to check very careful anything in the island that late in October.
I'd choose Southern Italy - maybe Sorrento and the surrounding area...
What exactly does R&R mean to you - slow and leisurely sightseeing, lying on a beach, shopping, eating, lying in bed and reading, sitting on a park bench and reading, sipping cocktails or wine all day while staring at gorgeous scenery...?
Rome, and vicinity, is great that time of year. If you want scenery, go with Umbria or the coast south of Rome (Tuscany might start getting cool by the last week of October).
