Itinerary Help in May

My husband and I are traveling to Europe in May for 16 days and would appreciate some help on our itinerary. We are planning the following:
Sunday - Thursday: Rome
Friday - Sunday: Cinque Terre
Monday - Tuesday: Innsbruck
Wednesday - Saturday: Munich
Sunday - Tuesday: Salzburg

We are planning to rent a car in Rome (at the airport when we leave) and drive the remainder of the trip to make it easier with bags.

Questions:
1. Is Innsbruck a good option for a stop over between Cinque Terre and Munich? Any other recommendations?
2. Any recommendations on where to stay in Cinque Terre if we have a car?

3. Do you think we should find time to stop in Tuscany or the hill regions in Italy?

Any help you can provide would be much appreciated. We really want to keep the itinerary somewhat mellow to really enjoy everywhere we stay and not be too busy. Thanks for your help!

where are you departing from to go back to the States?

I have been to Cinque Terre and Tuscany and would say go to Tuscany and make a day trip to Cinque Terre.

I would skip Innsbruck -- in the interests of full disclosure, I haven't been there but LOVED Salzburg.

You will be driving alot! Are you sure you want to spend your short time in Europe driving long distances? I'd stay in Italy for the majority of the time and if you are leaving from Munich, I would leave the car in Venice and take the train to Salzburg and then from Salzburg to Munich.

You don't need too many bags: You're on holiday!

I would also skip Innsbruck. In our opinion it is a dump. Garmisch-Partenkirchen is not too far out of your way, and is quite charming.
